History of Maple Syrup

Maple syrup has been boiling in the northeastern forests of
North America for hundreds of years. Aboriginal tribes celebrated the Sugar
Moon, the first full moon of spring, with rituals around sugar making.
Europeans learned the art of making maple syrup from them. Now Canada produces
80% of the World’s maple syrup.

What is maple syrup and how is maple syrup made?

Real maple syrup is made from the sap of maple trees. The starch that is stored in the trees becomes sugar. And it begins to rise in the sap when the temperatures rise in the late winter and early spring. It’s now that trees are tapped and the collection of the sap begins. The sap is then put through a heating process. This process evaporates most of the water and leaves a concentrated syrup.
